Vegie and Ricotta Patties

 1 medium carrot grated
 1 medium zucchini grated
 1 potato grated
 1 medium onion finely chopped
 ½ cup fresh ricotta cheese
 4 tbsp egg replacer
 Pepper to taste
 ½ cup Low Protein Baking Mix
 Oil for cooking

Combine all ingredients, expect oil, and mix well.

Heat a non stick fry pan and spray with oil.

Drop spoonfuls of mix into pan and cook until golden brown.

Turn to cook other side.
